Conversion theme default locale
Is there an English-Australian locale for the conversion default theme or do I have to use English-United Kingdom and is that "en_UK"?

There is not currently a locale for Australia built in.
You're right on both points -- you'll want to use the UK locale, and also the name is "en_UK".
This should work fine for you. The locale is used for two things:
1. It controls the month/day names on the calendar widget.
2. It controls which date formatting options are available on the field binding dialog. Using the UK locale will give you d/m/y options, where you'd get m/d/y options with the US locale.
