How can I change the bottom portion of the simple panel from the light blue to a light gray. Similar to how the light gray is diplayed on the forum.

Simple panels (panels in general) work a little differently than other widgets in Profound UI. Basically, panels rely on images to create the rounded corner effect. Having said that, in order to change the look and feel of the panel, you need create your own rounded corner images (they could be based on our existing ones).
After that, you need to create a custom panel that inherits all of the functionality of the "Simple Panel" but then add your own color scheme to it. This is done in JavaScript. We do package well-documented examples with your Profound UI installation. One of the examples, cover extending panels, changing the colors, fonts, etc.
The example can be found under this folder of your installation:
/www/profoundui/htdocs/profoundui/userdata/custom/widgets/panel.js
